One pomegranate is different from another
The fruitful lands of Azerbaijan are rich in one of the most beautiful gifts of nature, the pomegranate. However, Guloysha and Lavash pomegranates grown in Goychay, Agdash, Kurdamir and Agsu areas are not just fruits, they are also a part of cultural heritage. Because the farmers of these regions continue the peculiar cultivation traditions of these unique pomegranate species, passing them down from generation to generation for centuries.
Guloysha and Lavash - wine cannot be made from other types of pomegranate!
Most pomegranates have an acidity level of 18-20 (grams/liter). However, the tastiest wine is made of low-acid pomegranates. Specifically of Guloysha and Lavash! Because their acidity varies between 14 and 16 (gram/liter). But it doesn't end there. Farmers watch the ripening process very carefully. As soon as the sugar content of the fruit reaches 16-18%, pomegranates are picked and sent to our primary processing facility in Shamakhi district without any delay.
Production
No matter how fresh and juicy the fruits are, they must undergo a sorting process, damaged or below standard ones are being separated. After washing, the selected pomegranates are transferred to the chopping-crushing equipment, being chopped, and after the seeds are separated from the shell, they are pressed. The obtained fruit juice is filtered and cleared, then it is placed in tanks for natural fermentation.

Conservation via natural technology
A dark and cold cellar is not always a bad place. The special characteristics of the Pomegranate Wine are formed under these conditions.
When the sugar content in the fermentation process reaches 9-10%, our technologists stop the fermentation, then transfer the semi-sour and semi-sweet types of wines to storage in the barrels for at least one year conservation. There are barrels that have been conserved for more than 5 years and the wines in them have a richer and more complex flavor profile.
When the wine is ready for bottling, it is transported to our facility located in Baku, where it is again filtered and made transparent without any additives.
Then it goes through nanofiltration process once again as a result of natural precipitation it is exposed at -7C cold processing.
Thus, the obtained completely transparent product without any additives is filled into bottles in its cold state.
Transportation
The transportation process is one of the most important stages of wine production. Bottled wine is stored in the cellar in the central warehouse in Baku.
Our product is transported from the capital city to every corner of the country under the special temperature condition.
The key to our secret
In fact, we did not make a new discovery in winemaking. It's just that no one else has the type of pomegranate we have, and we are completely honest in our production process, and we do not use any additives. This is what our Nar (pomegranate) story is all about!
